I am having a time finding any kind of baby food recipe with meat that Baby Girl will consume voluntarily. I've tried shredded chicken in veggie purees, cubed chicken with herbs (sans the salt and pepper, as directed by the pediatrician), shredded turkey, and now tuna.
To this date, I have yet to find anything my little girl will eat. Instead, she slaps the food around on her high chair, screams, and knocks it off onto the floor for our patiently-waiting French Bulldog to happily gobble up.
Last week, I found this recipe for Broccoli & Cheddar Cheese Nuggets, and thought, "Aha! I'll bet I can sneak some meat into these babies, and we'll be set!" Not so much... Baby Girl loves cheese, so I thought this would be an easy trick, but she saw through it right away.
Now, to be fair, the problem could be that she's not used to the texture of baked foods. These little nuggets do come out with a crispy outside and gooey inside, which is YUMMY to me, but maybe not to her. I'm thinking about making another batch without the tuna to see if we fare any better; however, this recipe makes a huge treasure chest of nuggets, so we'll have to finish our tuna ones first!
I used the following recipe as directed (including the garlic powder, basil, and oregano), plus 1 can of light tuna and about a tablespoon or two of sour cream. The hubs and I think they taste great, but we can't get the baby to eat them! Oh well. Onto the next recipe...
Ingredients:
1 16-oz Package frozen broccoli, cooked, drained, and chopped
1 cup Seasoned bread crumbs (you could try using baby cereal if you want, we know it works well with "baby meatballs")
1 ½ cups Shredded cheddar cheese (please use real cheese and not a "processed cheese food" product. Try tomato & basil cheddar.)
3 Large eggs or 5 egg yolks - Most pediatricians say it's ok to use whole egg in a baked good when baby is over 8-9 months old without allergies. We would recommend that you substitute 5 egg yolks for the whole eggs if serving this to those under 1 yr. Ask YOUR pediatrician.
Directions:
Preheat oven to 375.
Lightly coat a baking sheet with olive oil and set aside.
Combine all remaining ingredients and mix well.

Shape mixture into nuggets or fun shapes such as squares or squigglies etc..and place on baking tray. Bake for 20 to 25 minutes, turn nuggets over after 15 minutes. Serve warm. Be sure to crumble these if your baby needs.
